Breakfast Burgers




The kids have a day off from school, and they are holding their tummies and moaning that they are going to die from starvation! (They have already eaten cereal.) What do you do? Make "Breakfast Burgers", and let the kids help! This quick and easy, "Kid-Friendly" recipe is delicious for breakfast, brunch, or anytime! Variations are included.




Ingredients:

hamburger buns
eggs
bacon 
shredded cheddar cheese (or your favorite)
pepperoni
milk
Additional optional toppings (such as cooked and crumbled sausage, onions, bell peppers)



Directions:

1. Fry, drain, and break bacon into bite-size pieces.

2. Spray a non-stick skillet with Pam. In a small bowl, mix eggs with a "dollop" of milk. "Scramble" in skillet until cooked through. Brown lightly, if preferred.

Tip: Allow 1 egg per burger, and there will be a small amount left. Eggs may also be fried hard.

3. On 1/2 of a hamburger bun, layer scrambled egg, bacon, and pepperoni.



4. Sprinkle shredded cheddar cheese on top. 


5. Microwave for 30 seconds, or until cheese is melted.



6. Enjoy!!


Here's my variation: "Open-faced Cheesy Egg Sandwich" made with Scrambled Eggs and 2% American Cheese on Toast.


Leftover scrambled egg is delicious topped with pepperoni and shredded cheddar. Microwave about 20 seconds, until cheese is melted.

Ms. Nancy's Notes: Kids love to cook in the kitchen, and if they help, they are more likely to try the food they help prepare. These "Breakfast Burgers" were an idea from grandson Noah, and we had a great time creating them!
