"MEGA" Scotcheroos





Scotcheroos have long been a favorite snack in our family.  Several years ago, when I had to eliminate chocolate from my diet for medical reasons, I was disappointed that I could no longer eat this quick and easy, delicious dessert.  I continued to make this scrumptious recipe for my family, and then one day it occurred to me - modify Scotcheroos and leave out the chocolate!  Of course, that led to a mutiny as far as my chocolate-loving family is concerned!  I therefore created my own variation, complete with "crunchy" peanut butter, my favorite! Now everyone is happy!! Enjoy!!



Ingredients:
1 cup white granulated sugar
1 cup white Karo Syrup
2/3 cup crunchy peanut butter (I use Jif)
1/3 cup creamy peanut butter
7 cups Rice Krispies Cereal
1/4 Cup Reese's Peanut Butter Chips
3/4 Cup Butterscotch Chips (divided)
1/2 Cup Semi-Sweet Chocolate Chips







Directions: 
  • Butter the bottom of a 9" x 13" pan, or spray with Pam. 
  • Mix sugar and Karo Syrup in a large, heavy pan with a large spoon.
  • Stir while cooking over medium-high heat until the mixture comes to a complete boil.

  • Immediately remove from heat, add peanut butter, and stir. Quickly add Rice Krispies Cereal (a couple of cups at a time) and stir.
  • Press mixture into a 9" x 13" pan, using a large metal spoon and/or the palm of your hand.  





Icing:

  • Pour 1/4 Cup Peanut Butter Chips and 1/4 Cup Butterscotch Chips in a small glass bowl. Microwave 30 seconds and stir.  Continue microwaving and stirring at 10-15 second intervals until mixture can be stirred smoothly. Spread on 1/3 of the Rice Krispies Mixture.

  • Pour 1/2 Cup Chocolate Chips and 1/2 Cup Butterscotch Chips in the glass bowl. Microwave 1 minute and stir.  Continue microwaving and stirring at 10-20 second intervals until mixture is smooth.  Spread on the remaining 2/3 of the Rice Krispies Mixture.







  • Let cool slightly, and cut into bars.  Place in refrigerator about 1 hour to "set".


Nancy's Notes:

  • My family doesn't like to wait 1 hour to enjoy this dessert, so I carefully remove a few "Mega Scotcheroos" and place them on a plate. I put the plate in the freezer for 5-8 minutes, until the icing is set.
  • A metal or glass pan may be used for this recipe.
