Joshua's Party Quesadillas


Are you looking for a quick and easy dish that can be served at parties? Try Joshua'a Party Quesadillas! This delicious recipe was created by my son Joshua for his son Lucas's Mickey Mouse Birthday Party! They can be served spicy or not, and are easily adapted to your party theme! 


General Directions:

Preheat a griddle to medium high heat. Put a small amount of canola oil on the griddle.  


Cheese Quesadillas

Put shredded cheddar cheese on one-half of a medium tortilla soft shell. Fold in half, and place on griddle Use a pastry brush to lightly coat top side with canola oil. Flip the quesadillas after 5 minutes, and flip again after 5 minutes, Continue flipping every 2 minutes, until lightly golden brown on each side, Remove from heat, and immediately press with metal cookie cutter to make "Mickey" impression, being careful not to cut through the tortilla.


Chicken and Cheese Quesadillas

Cook chicken breasts, and tear in small pieces, or shred in a food processor. Mix with shredded cheese, and follow directions above. 

Serve with sour cream, salsa, Tabasco Sauce, and/or your favorite toppings.



Variations:

  • Rotisserie Chicken can also be used.
  • Leftover Taco Meat works well.
  • Cooked vegetables can be added.
